And it is indispensable that we sleep correctly because this will lead to an adequate regeneration of our muscular, immune, and visual systems. Vegan tacos are an excellent alternative for those long days when we do not feel like cooking, have little time or feel exhausted. Forget about pre-cooked meals, turn your timer on, you will only need 15 minutes of your valuable time to enjoy this delicacy. Sit down and please yourself with a lush dinner like this one. You will thank us later.

All the food items you will need are 2 cups of cooked beans (400 g); one cup of tomato sauce (250 g); 2 teaspoons of some spicy sauce —such as Tabasco—; 2 teaspoons of cumin powder; one avocado; 8 cherry tomatoes; ¼ cup of corn (35 g), and eight corn tortillas. You can include as many spices as you want to, including salt.

The cooking process only takes three simple steps:

  1. Place the beans, tomato sauce, spicy sauce, and cumin powder in a pan. Heat it to medium-high for some minutes.
  2. Chop both the avocado and the cherry tomatoes. You can also dice them if you want to.
  3. Distribute all the stuffing —the beans, tomato sauce, avocado, cherry tomatoes, and corn— on the tortillas and serve immediately.

Who does not love a big, mouthwatering burger?

A good burger is by far the most tempting menu for a lot of us. And in its traditional version, it contains enormous amounts of calories and other not-so-healthy elements. But guess what, there is a vegan alternative for almost anything. It does not matter if you are 100% vegan or only want to forget about meat consumption for some days; you will not be able to resist this yummy vegan burger made of oat and legumes.

Start writing the grocery list, here is what you need to prepare this incredible dish:

One cup of oatmeal; 1 cup of adequately cooked and drained legume —in this occasion, we have chosen some cooked black soybean—.

Continue with one chopped onion; 1 ½ cups of mushrooms (400g); 2 chopped garlic cloves; 2 tablespoons of flour; ½ cup of hot water or vegetable stock; ½ cup of pumpkin and sunflower seeds.

Of course, we cannot forget spices, such as ground cloves, ground black pepper, cinnamon, oregano, and salt. You can adjust seasoning to taste.

Time to start cooking!

Chop the onion, garlic, and mushrooms. Sauté both the onion and garlic in a pan using some drops of olive oil. Once the onion is translucent, add the chopped mushrooms, salt, and pepper.

Place the oatmeal, cooked black soybean, pumpkin seeds, and sunflower seeds in a bowl and add some salt. Once the mushrooms and onions are ready, pour them into the bowl as well. Do not forget to include the remaining liquid that is in the pan. Mix all the stuff and let it cool down for some minutes so the oatmeal can get wet.

When mixing everything, crushing the legume while preserving its texture is essential. If you find the mix is too dry, you can add as much water or vegetable stock as you need to wet the oatmeal appropriately. Once the grain has absorbed all the liquid and the mixture is homogeneous, add to tablespoons of flour, incorporate the stuff, and shape it with your hands to form burgers.

Finally, heat a pan and include some olive oil. Incorporate the burgers and cook at medium heat until they look browned on the outside. Beautiful.
